Vineyard
The Frontonnais vineyard, located near Toulouse, stretches across the wide terraces between the Garonne and Tarn rivers as you leave Toulouse on the right bank.
Grape varieties
100% Négrette. This grape, unique in the world, first appeared in the 12th century under the name “MAVRO” (meaning “black” in Greek), brought back from Cyprus by the Knights of the Order of Saint John of Jerusalem.
A demanding variety, it has adapted exclusively to the Fronton terroir. Négrette is one of the rare grape varieties whose aromas in the wine faithfully mirror those found when tasting the fresh grape.
Yield
Yield control at the flowering stage and green harvesting before veraison. Maximum yield of 20 hl/ha.
Vinification
Harvested from low yields (25 hl/ha). The grapes are picked at night and in the early morning hours.
Slow, low-temperature fermentation in temperature-controlled stainless steel tanks (25–26°C).
Color extraction through pumping over and punching down, carefully adjusted according to daily tastings by our oenologist, Mélanie Loustalet.
Tasting Notes
Deep ruby color with violet highlights. A lively, expressive nose with powerful aromas of sun-ripened red fruits.
The palate is smooth, round, and velvety, offering a fine balance of crushed strawberry and peppery notes.
Long and refined on the finish, this is a supple and generous wine.
Food Pairings
Cured ham, roast pork with prunes, rabbit with olives, Brie de Meaux.
